Tasting note

A deep, youthful ruby that still shows real vibrancy for its age. The nose delivers deep, concentrated aromas of chocolate-covered cherries paired with bright floral lift, a signature of the Martin Stelling Vineyard's gravelly loam. The entry is juicy and silky-smooth, building through a mid-palate of mouthwatering dark cherry fruit supported by well-integrated oak rather than overt toast. Tannins are polished and approachable relative to Far Niente's flagship Estate bottling, reflecting Cave Collection's role as the more immediately drinkable sibling. The finish is long and fruit-driven, with just enough structure to suggest a few more years of upside for anyone willing to wait.

The 2015 vintage

The 2015 Napa Valley growing season opened with unseasonably warm late-winter and early-spring temperatures, pushing bud break and bloom well ahead of schedule. Cooler temperatures during peak bloom in May caused uneven fruit set, which sharply reduced yields across the valley even as the rest of the season stayed warmer than any year since 2008. The combination of small berries, concentrated fruit, and an early harvest produced a vintage widely regarded as high in quality despite the reduced crop.

About Far Niente

Cave Collection is Far Niente's second tier of Oakville Cabernet, sourced from the same Martin Stelling Vineyard behind the winery but selected and blended to drink with less delay than the flagship Estate Bottled wine. It was made under longtime winemaker Dirk Hampson's direction, aged in the estate's namesake wine caves, and released to critical acclaim, earning a 94-point score on release alongside strong pricing that reflected demand for the vintage.

Pairing suggestions

Cellared suggestions based on the wine and dish descriptions.

Pan-seared duck breast with cherry reduction

The wine's dominant chocolate-cherry fruit profile makes an almost literal match for a cherry-based sauce, while its polished tannin will not fight the duck's fat.

Grilled lamb chops with herbs de Provence

Silky, well-integrated tannin and floral lift in the wine complement lamb's richness without the aggressive grip a younger, tighter Cabernet would bring.

Dark chocolate truffles with sea salt

The chocolate-covered cherry aromatics in the wine make it one of the rare Cabernets that genuinely pairs with dessert chocolate rather than just tolerating it.

Frequently Asked

Is this wine ready to drink now?

The canonical CAI full drinking arc is 2020-2046. Within that arc, the peak window is 2022-2038. The full arc is the broader period the wine may drink well; the peak window is when it is most likely to show its best balance. Storage, fill level, cork condition, and preference can shift the decision. Taste before adding more air or holding the rest.

Should I decant it before serving?

A 30 to 45 minute decant is enough to open up the floral and cherry aromatics without needing the long aeration a more tannic, structured Cabernet would require.

What food pairs best with this wine?

Duck, lamb, or dishes built around dark cherry and chocolate flavors play directly into the wine's dominant tasting notes.

How long can this bottle keep aging?

Given the reduced, concentrated 2015 crop, this wine has the structure to hold for another 5 to 10 years, though it is already showing beautifully.
