The ‘21 Barolo Ciabot Mentin.
The 2021 Clerico Ciabot Mentin is a Ginestra-cru Barolo from the Wine Spectator-Classic 2021 vintage, three years out from its drinking window.
Tasting note
Garnet-red moving to a translucent tawny rim, with a long, slow disk on the swirl. The nose, even three years pre-window, leads with the Nebbiolo signature trinity of dried rose petal, tar and sour cherry, then opens onto strawberry-leaf, red plum, leather, anise, dried herbs and a faint truffle note that the Ginestra cru is known for. Tobacco and violets carry the back of the nose. The palate is high-tension and structured: tannin sits around 9 (formidable), acidity at 8, and the body around 7. The trio reads as formidable on paper. Sour cherry, plum, raspberry and red forest berries run through a long mid-palate, then the finish narrows on tar, anise and a savory mineral close. Right now the structure is firmly in front of the fruit, which is exactly what you want pre-window for a wine built to age 25-plus years.
The 2021 vintage
The 2021 Barolo vintage is widely regarded as the best in a generation. A cold winter built up ample water reserves, the spring and summer ran on a temperate rhythm, ideal September conditions allowed the late-ripening Nebbiolo to extend hang time, and an October harvest produced the long, classic-shaped wines Barolo had been waiting for since 2016. Wine Spectator graded it a Classic at the maximum quality 5 and 99 points across the appellation, with the official call of 'structured, intense and balanced, with freshness and fine aging potential.' Decanter called the vintage 'a modern benchmark.' For drinkers, 2021 reads as a benchmark vintage to compare future years against, with the wines built for 20 to 30 years of cellar life.
About Domenico Clerico
Domenico Clerico is one of the historically influential modern Barolo producers, based in Monforte d'Alba and best known for the Ginestra cru. The estate was a 1990s pioneer of shorter macerations and barrique aging, and has gradually shifted back toward longer fermentations and a mix of French oak sizes (mostly 500L tonneau plus larger 25hl botte for the longer-aged crus). Ciabot Mentin is the estate flagship Ginestra bottling, traditionally aged 30 to 36 months in French oak with a long bottle-aging period before release. The cru sits on south-facing calcareous-marl slopes at 350 to 400 meters elevation, producing the densest Clerico bottling and the most-cellarable of the lineup. For a vintage and appellation peer, see the Ceretto Barolo Bricco Rocche 2021.
From the cellar: pair with
Brasato al Barolo (beef braised in Barolo)
The classic Piedmontese pairing because tannin at 9 cuts the long-braise collagen, the wine tar-and-rose aromatics mirror the reduction sauce, and the full body around 7 matches the dish depth.
Tajarin pasta with white truffle and butter
Ginestra signature truffle note in the wine echoes the white truffle directly, the acidity at 8 cuts the brown butter, and the medium-full body weight is the only structure that does not bulldoze the truffle delicacy.
Aged Castelmagno cheese with chestnut honey
Aged Italian cheese nutty depth pairs with the wine leather and tobacco notes, the high tannin handles the cheese intensity, and the honey adds a foil to Nebbiolo bright sour-cherry fruit.

Frequently Asked
When should I drink the 2021 Clerico Barolo Ciabot Mentin?
The canonical CAI full drinking arc is 2029-2060. Within that arc, the peak window is 2035-2050. The full arc is the broader period the wine may drink well; the peak window is when it is most likely to show its best balance. Storage, fill level, cork condition, and preference can shift the decision. Taste before adding more air or holding the rest.
Does it need decanting?
Once in window in 2029 onward, plan on a 2 to 3 hour decant or a double-decant. Young Barolo from a structured vintage like 2021 throws very firm tannin and benefits enormously from air. By 2040 a 60 to 90 minute decant is enough; by 2050 you can open and pour with just 30 minutes of bottle air.
What food works best?
Barolo classic pairings center on three axes: long-braised beef (brasato), white truffle dishes (tajarin, risotto, fonduta), and aged hard cheeses (Castelmagno, Bra Duro). The high tannin needs fat and protein to integrate; do not pair pre-window Barolo with anything light, vegetal or acidic.
How does Ciabot Mentin compare to other Clerico Barolos?
Ciabot Mentin is the estate flagship from the Ginestra cru in Monforte d Alba, traditionally the densest, most age-worthy and most tannic bottling in the lineup. It sits above the entry-level Pajana cru (from the same Ginestra MGA) and the Aeroplanservaj (Mosconi cru). For the 2021 vintage specifically, Ciabot Mentin is built for 25-plus years of cellar life.
