Burgundy Wines: Drinking Windows & Cellaring Guide

Burgundy is the global reference point for Pinot Noir and Chardonnay. The Cote d'Or runs north to south from Dijon to the southern boundary at Santenay, split into the Cote de Nuits (Pinot Noir country, with Gevrey-Chambertin, Vosne-Romanee, Chambolle-Musigny, Morey-Saint-Denis, and Nuits-Saint-Georges as the cornerstone communes) and the Cote de Beaune (predominantly Chardonnay, with Meursault, Puligny-Montrachet, Chassagne-Montrachet, and Corton-Charlemagne as the white-wine apex; Pommard and Volnay produce the Cote de Beaune's most age-worthy reds). Chablis sits north of the main Cote d'Or and produces lean, mineral Chardonnay. Beaujolais sits south and produces Gamay-based reds (the Cru Beaujolais wines from Morgon, Moulin-a-Vent, and Fleurie are the long-agers). The Domaine system, the village-vs-Premier-Cru-vs-Grand-Cru hierarchy, and the parcellation across small ownership blocks make Burgundy the most fragmented and most producer-dependent fine-wine region in the world. Reference producers (Domaine de la Romanee-Conti, Domaine Leflaive, Domaine Leroy, Henri Jayer descendants, Coche-Dury, Roumier, Dujac, Mugnier, Ramonet) build wines that age 20-40 years in structured vintages.

When does Grand Cru Burgundy peak?

Grand Cru Pinot Noir from structured vintages from reference producers peaks year 15-25 and holds another decade. Grand Cru Chardonnay (Le Montrachet, Corton-Charlemagne, Bienvenues-Batard-Montrachet) peaks year 12-20. Premier Cru wines peak 3-5 years earlier than Grand Cru from the same producer in the same vintage.

How long can I age white Burgundy?

Top producers from structured vintages reliably age 12-20 years, with the best examples from cool vintages holding 25+ years. Coche-Dury Corton-Charlemagne, Leflaive Chevalier-Montrachet, and Ramonet Le Montrachet have multi-decade aging records. Mid-tier white Burgundy is typically a 5-10 year wine.

Is white Burgundy still affected by premature oxidation?

Premox was a significant problem for white Burgundy from approximately 1996 to 2010, affecting wines from many top producers. Cork and oxygen-management practices have largely resolved the issue in vintages from 2012 onward. Cellaring expectations for current-vintage white Burgundy have returned to historical norms.

What was the best recent Burgundy vintage?

2015 and 2019 are the standout structured vintages for reds. 2017 produced more elegant, classically proportioned wines that drink beautifully now and will age. 2014 was a benchmark year for whites, producing tense, mineral Chardonnay with exceptional aging potential. 2020 looks excellent for both colors on early showings.

Should I decant Burgundy?

Young Pinot Noir (under 10 years): 60-90 minutes decanting. Mature Pinot Noir (10-20 years): 30-45 minutes. Aged Pinot (20+ years): 15-20 minutes maximum, and watch carefully for fragility. White Burgundy is typically not decanted; pour from a chilled bottle into the glass and let it warm in the glass.
