Too Young: holding.
In 2026 the wine is still in its primary phase. The drinking window opens in 2028 and peak expression begins in 2032. The dense fruit and firm tannins dominate, with the famous To Kalon savory mineral character beginning to emerge. Lay this down. If you must open one early, decant for 3+ hours.
The ‘21 H.W.C. Cabernet Sauvignon.
A single-block To Kalon Vineyard Cabernet named for H.W. Crabb, the Oakville pioneer who planted the site in the 1860s.

Tasting note
Deep ruby-purple, opaque. The nose lifts with cassis, dark plum, and a distinctly powerful mineral-and-graphite edge that signals To Kalon terroir. Notes of crushed stone, dark cocoa, and warm cedar build with air. The palate is full-bodied with towering, fine-grained tannins (9/10) and bright acidity (7/10). Cassis, black cherry, dried herbs, and a savory iron undertow run through the mid-palate. The finish is extraordinarily long, structured, and finishes on a note of dark chocolate and warm stone.
The 2021 vintage
2021 in Oakville produced wines of remarkable structure and concentration after a dry, cool growing season. To Kalon and the surrounding heritage sites particularly benefited from the year's combination of ripeness and freshness.

From the cellar: pair with
Dry-aged porterhouse with bone marrow butter
The wine's powerful structure and dark fruit meet the steak's char head-on; the marrow softens the firm tannins.
Braised lamb shank with rosemary jus
Long-cooked lamb's depth aligns with the wine's secondary herbal notes; the rich jus mirrors the wine's density.
Venison with juniper-and-berry sauce
Game's depth aligns with the wine's mineral edge; the berry sauce echoes the dark fruit.
