Peak 2007-2027

Where it is, July 2026

At Peak: in the heart of its drinking window (2007-2027).

In 2026, the Abreu Thorevilos 2000 is in the final stages of its peak drinking window, with peak_end arriving in 2027 and a hard decline not expected until 2035. This wine has been at or near full maturity for over a decade, and in 2026 it presents at what can accurately be described as the mature plateau of its arc: primary fruit replaced by complex tertiary character, tannins fully integrated, and the wine's original volcanic-soil minerality now expressing as an almost ethereal mineral persistence on the finish. This is not a wine to hold further in search of additional development. The window for drinking at its best is now, in 2026, with another year of peak-level quality available before the slow decline phase begins. Decant briefly and serve relatively soon after opening. Any remaining bottles in a cellar should be prioritized for consumption over the next 12 to 18 months. Tasting note

After more than two decades in bottle, the 2000 Abreu Thorevilos has arrived at a place of beautiful, resolved complexity. The color has shifted from its original deep ruby to a garnet with a brick-tinged rim that speaks to its age. The nose opens with dried black cherry, pressed violet, truffle, and aged cedar box, with layers of iron ore, dried rose, and cocoa nib emerging with extended air. The palate is seamlessly structured at this stage, the dusty tannins of its first decade now fully dissolved into the fruit and replaced by a smooth, polished texture. The core of kirsch, fig paste, and polished leather remains vivid. The finish delivers haunting minerality and spice that lingers for well over a minute. A Napa Cabernet that demonstrates what volcanic-soil sites were capable of achieving even in a mixed vintage year.

The 2000 vintage

The 2000 Napa Valley vintage received an 85-point Very Good rating from Wine Spectator, with its character described as mixed overall, but noted for stellar wines that may be overlooked and undervalued. The vintage was challenging: cooler temperatures during the growing season resulted in slower-than-average ripening, and some sites struggled to achieve full phenolic maturity before harvest. However, the best-situated vineyards on rocky, volcanic soils with excellent natural drainage fared considerably better, as the natural water stress on these sites concentrated flavors without the dilution that affected heavier soils in wetter pockets of the valley. Abreu's Thorevilos site, precisely because of its volcanic rock and drainage characteristics, produced a wine that defied the vintage's mixed reputation. Twenty-six years on, the 2000 Thorevilos stands as evidence that site quality can transcend a difficult vintage year.

About Abreu

David Abreu is Napa Valley's defining viticulturist, a farmer whose reputation was built not on winemaking credentials but on his singular ability to coax extraordinary fruit from the valley's most demanding terroirs. His client roster through the 1990s and 2000s included Harlan Estate, Screaming Eagle, Colgin Cellars, and Bryant Family Vineyard, earning him a reputation as the farmer behind Napa's most collectible wines long before his own label reached market recognition. At Thorevilos, Abreu works volcanic, rocky ground using low-yield viticulture and selective harvesting by hand to produce fruit of exceptional concentration and mineral specificity. The wines are allocated through a mailing list and are made in quantities small enough that secondary market appearances remain rare, even for older vintages such as the 2000.

From the cellar: pair with

Duck Confit with Lentils

The 2000's mature kirsch and dried-fruit character and polished tannin structure harmonize with the rich, gamey depth of duck confit, while the lentils provide earthy resonance with the wine's truffle and iron-ore complexity.

Roasted Lamb with Herbs de Provence

Lamb's fat and protein bridge to the wine's cocoa nib and fig paste elements, while Herbs de Provence echoes the dried rose and cedar aromas that define this fully evolved Cabernet.

Aged Comte with Black Truffle Honey

The wine's haunting mineral finish and dried-fruit core find a direct counterpart in aged Comte's crystalline texture and truffle honey's earthy sweetness, a pairing that amplifies both without competing.

Service & cellaring

Serving Temp
60-63F (16-17C)
Decanting
Decant briefly, no more than 30 to 45 minutes in 2026. After 26 years of bottle age, the 2000 Thorevilos has delicate tertiary aromatics that benefit from a short period of aeration to open and express, but risk losing their fragrant complexity with excessive air exposure. Finish the bottle within one to two hours of decanting.
Cellar Storage
55F (13C), 60-70% humidity, bottle on its side. Prioritize consumption over the next 12 to 18 months as the peak window closes in 2027.

The drinking window on this bottle is calculated with the Cellared Ageability Index (CAI) v1.0, a 10-factor model. Try the free drinking window calculator on any wine, or read when to drink wine for the practical signals.

Frequently Asked

When should I drink the Abreu Thorevilos 2000?

The 2000 Thorevilos is in the final stage of its peak drinking window, with peak_end arriving in 2027 and hard decline not expected before 2035. In 2026, this wine is drinking beautifully at full maturity, with complex tertiary character of truffle, dried rose, and polished leather fully intact. There is no benefit to holding further. Open bottles over the next one to two years to experience the wine at its best before the slow decline phase begins after 2027.

How long should I decant the Abreu Thorevilos 2000?

Decant briefly, no more than 30 to 45 minutes. After 26 years of bottle age, the 2000 Thorevilos has delicate tertiary aromatics that benefit from a short period of aeration to open and express, but are at risk of losing their fragrant complexity if left open too long. Use a wide-bowled decanter, pour, allow 30 minutes, then serve. Finish the bottle within two hours of decanting to preserve the wine's defining mineral finish and dried-fruit complexity at their best.

What makes the Abreu Thorevilos 2000 exceptional given the difficult vintage?

The 2000 Napa Valley vintage was rated Very Good overall by Wine Spectator, with a character described as mixed and some sites producing wines that were green or underripe. What separates the Thorevilos 2000 is its vineyard site: volcanic, rocky soils with excellent drainage that naturally stressed the vine, concentrating flavors without dilution even in a cooler, slower-ripening year. Twenty-six years of bottle age have transformed those concentrated flavors into a complex, evolved wine that shows what 2000 Napa was capable of from the very best terroirs.

What foods should I serve with the Abreu Thorevilos 2000?

At full maturity, the 2000 Thorevilos calls for foods with depth, earth, and fat rather than raw power. Duck confit, roasted lamb, and game birds are excellent choices that harmonize with the wine's kirsch, fig, truffle, and dried-rose character. Aged hard cheeses such as Comte or Gouda aged 18 months or longer, served with truffle accompaniments, are also superb. Avoid overpowering flavors, heavy sauces, or anything acidic enough to strip the wine's delicate tertiary complexity.

Are there other Abreu wines to compare alongside the Thorevilos 2000?

David Abreu's Thorevilos program spans multiple vintages, and both the 2016 and 2017 are currently published on this site for comparison. They show the same site-driven volcanic minerality at an earlier, more primary stage of development, offering a vivid before-and-after picture of how this vineyard evolves over time. The Abreu Cappella Red program (2009, 2012, 2016, 2017) and Madrona Ranch Cabernet Sauvignon 2021 offer further perspectives on Abreu's single-vineyard philosophy from different sites on the valley floor.
