A 60-to-90-minute decant is recommended for bottles opened now, which will open the aromatic layers and allow the sculpted tannins to relax into a more approachable configuration. Those who hold bottles for two to three more years will encounter a wine that has developed additional secondary complexity, with the olive tapenade and dark mineral notes deepening alongside the fruit.
About Foradori
Elisabetta Foradori is one of Italy's most celebrated winemakers, a pioneer of biodynamic viticulture in Trentino and the leading force in the revival of Teroldego as a serious, age-worthy variety. Her work with Granato, which was first made in 1986 and was among the first Italian wines to demonstrate that Teroldego could produce wines of international stature, transformed both the winery's reputation and the way the grape was perceived globally. Today the domaine farms exclusively according to biodynamic principles, with clay-amphora fermentation and minimal sulphur additions.
