Approaching Peak: the peak window is ahead.
In 2026, at five years old, this Flagship Cabernet has only just entered its window (2026-2055) and is still four years from a 2030 peak. The high, still-firm tannins and medium-high acidity haven't fully knit together yet, so a bottle opened tonight will show real grip before it shows real pleasure. That's not a flaw, it's the price of the concentration built into this multi-vineyard blend. A few more years of bottle age will make the difference between fighting the wine and enjoying it.
The ‘21 Flagship Cabernet Sauvignon.
Memento Mori's 2021 Flagship blends five of Napa's most sought vineyard lots into a still-closed Cabernet that rewards patience past 2030.

Tasting note
On the palate, black and red-toned fruits (black cherry, cassis) sit alongside savory spice, loam, mocha and cedary oak, wrapped in a full-bodied, silky texture. The tannins are already fine-grained despite the wine's youth, and the structure is built for a long aging arc rather than early drinking. Give it air: right now the fruit and the truffle-driven savory notes are still working out which one leads.
About Memento Mori
Winemaker Sam Kaplan has led Memento Mori's cellar since the project's 2010 founding by three partners aiming to make a modern cult Napa Cabernet. This Flagship bottling is assembled from five of Napa's most recognized vineyard sites, Beckstoffer Dr. Crane, Beckstoffer Las Piedras, Oakville Ranch, Vine Hill Ranch and Weitz, before any single-vineyard selections are pulled off. That lot-by-lot sourcing, rather than a single estate vineyard, is what built the winery's run of multiple 100-point scores in a little over a decade.
From the cellar: pair with
Prime rib with horseradish cream
The wine's ultra-fine but still-firm tannins need the fat of prime rib to soften, and the truffle and mocha notes in the glass echo the roasted crust rather than fighting it.
Lamb loin with black pepper crust
Savory iron minerality and cedary oak in the tasting profile mirror the char and pepper on lamb loin, while the wine's full body matches the cut's richness without being outmuscled.
Black truffle risotto
This is a direct echo of the wine's own truffle note, and the risotto's creaminess gives the still-firm 2021 tannins something to grip onto besides themselves.

Frequently Asked
Is it too early to open the 2021 Memento Mori Flagship?
By most standards, yes. As of 2026 the wine has only just entered its window (2026-2055) and won't reach peak until 2030. Open it now and expect firm, grippy tannins over fruit that hasn't fully unfolded. It will still taste serious, just not the wine it will become in a few more years.
How long should this wine be decanted?
Plan on at least 90 minutes to two hours if you're opening it before 2030. The tannin structure is still tight at this age, and extended air time does more work here than a quick swirl in the glass ever could.
Does this wine need long-term cellar storage, or is a wine fridge enough?
A stable wine fridge at 55°F with 60-70% humidity is enough for a wine with this long a runway. Because it isn't even inside its peak window yet, temperature stability matters more right now than any special aging vessel. Lay it on its side and leave it until closer to 2030.
Which vintage of Memento Mori Flagship should I buy if I want something drinkable sooner?
Look for an older release, ideally one already five to eight years past its own vintage date. This 2021 came from a low-yield, concentrated year, which means more structure and a longer wait than a bottle from a higher-yield, earlier-drinking vintage would need.
